How to Make Cannabis-Infused Chili

Fall is here, and the weather has officially cooled down. So bust out your sweaters, make a mug of weed tea, and prepare for the cozy days ahead. And if you’re looking to whip up something delicious in the kitchen, chili is an iconic cool-weather comfort food–and what could possibly make it more delightful than a little cannabis infusion? Old Pal’s Chef Wendy has whipped up a soul-soothing, buzz-inducing pot of cannabis-infused chili that will make your heart sing. Warm up in all the right places and follow along as we make a steaming pot of pot-filled goodness. 

Old Pal’s Cannabis-Infused Chili

An excellent batch of chili is complex. It’s rich, hearty, and filled with robust flavors and aromas. It’s kind of like cannabis in that way, and we’re sure there are plenty of natural terpenes in these ingredients. Before getting too excited, ensure you’ve got all the ingredients you need to make your chili. If you need to make a grocery run, be sure to pick up some Old Pal flower while you’re out!

Infused Chili Ingredients

  • ¼ cup Old Pal infused Olive Oil
  • 1 lb ground beef
  • 1 medium onion
  • 2 ½ tbsp chili powder
  • 2 tsp paprika
  • 1-2 tsp cayenne pepper (to your preference)
  • 2 tbsp ground cumin
  • 2 tbsp tomato paste
  • 2 tsp garlic salt
  • 2 cups beef bone broth
  • 1 (15oz) can tomato sauce
  • 1 (15oz) can fire-roasted diced tomatoes
  • 1 can red kidney or pinto beans, drained and rinsed
  • 1 (8oz) can diced green chiles
  • 2 jalapenos
  • 2 medium white or yellow onions
  • 4 cloves garlic
  • Scallions
  • Shredded cheese
  • Sour cream

Step 1: Make the Infused Olive Oil

Before you make your cannabis-infused chili, you’ll need to infuse olive oil with some classic Old Pal flower. We like Indica Ready to Roll flower for this recipe, as it’s pre-ground for optimal consistency.

You’ll need:

  • 1 French press
  • A pot of boiling water to hold the French press
  • 1 gram Old Pal flower
  • 1 cup olive oil

Before you infuse the olive oil, you must decarboxylate the weed to activate the THC. If you skip this step, you’ll be pretty disappointed in the end result! Don’t worry, it’s an easy process.

Preheat the oven to 230 degrees Fahrenheit (110 degrees Celsius). Line a baking sheet with parchment paper and spread the weed across the paper. Bake for 45 minutes. That’s it! See, not so bad. 

While the herb is baking, boil a pot of water large enough to sit the French press inside without overflowing the pot. 

Mix the decarboxylated weed and the olive in the French press and put them in the boiling water. Simmer for 45 minutes, remove from the pot, and let cool. Then, strain the herb from the oil with a cheesecloth. Be sure to squeeze out all that extra goodness. Set the infused oil aside until Step 3.

Step 2: Prep Your Veggies

Dice the jalapenos, chop the onions, and mince the garlic. Set aside for later. 

Step 3: Heat the Oil and Add in Base Ingredients

Heat a large stock or soup pot on medium-high and add the infused Olive Oil. Heat for two minutes, then add the ground beef. Let the bottom of the beef caramelize before breaking it up to stir. 

Once the beef is about halfway browned, add the chopped onions and garlic. Stir to combine. Things are going to start smelling pretty incredible right about now.

Step 4: Spice it Up and Get Saucy

Add cumin, cayenne, paprika, chili powder, and garlic salt. Stir it up! 

Now it’s time to mix the sauce base. Add the jalapenos, diced green chiles, tomato sauce, and fire-roasted tomatoes, and mix it all in. Next, add the tomato paste. The pot should be lightly simmering right about now. 

Next, add the pinto beans and the bone broth. Stir to combine. 

Step 5: Simmer and Set Up the Chili Bar

Patience is a virtue, or so they say. Let the pot of chili simmer for 25-30 minutes, stirring occasionally. While you’re waiting, prepare your favorite chili toppings. We like chopped scallions, freshly grated cheddar cheese, and of course, a dollop of sour cream. 

Other ingredients are crumbled tortilla chips, chopped radish, chopped black olives, sliced avocado, finely shredded cabbage, cilantro, and lime wedges. You can also have a little fresh jalapeno and onion for anyone who likes an additional kick. Hot sauces are always a good idea for chili night.

Step 6: Serve it Up

Give the chili a final stir and serve in large bowls. Lay out the chili toppings side by side on a large serving platter or in individual cups and bowls of their own.
